Why open faced tomato sandwiches?

Oh the flavors of late summer! Open faced tomato sandwiches are one of my favorite sandwiches. Why open faced?

1) For the same amount of bread you can eat more tomato. Isn’t the tomato the reason why you are eating the sandwich? It also means you are increasing you intake of non-starchy vegetables, which is a good thing!

2) When sandwiches are open faced, you get almost the same number of bites – and therefore taste experiences – as you would from two sandwiches. The same number of taste experiences as in two sandwiches, but only the calories of one sandwich. What’s not to like?!

3) If you are having to limit the amount of bread you consume due to food sensitivities or IBS,  by having only one slice of bread you get to still enjoy the experience of eating this summer delight.

3) Believe it or not, open faced sandwiches are less messy than regular sandwiches. Keep the tomato going into your mouth instead of falling on your plate or into your lap.


Having personally struggled with weight and gut health issues, I understand how easy it is to think that food is the enemy especially with the changes our bodies undergo as we age.  It doesn’t have to be that way!
